Ingredients

  • 1 c. yellow corn meal
  • 1 c. all-purpose flour
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 2 Tbsp. sugar
  • 1 c. buttermilk
  • 1 egg, beaten
  • 1 (8 3/4 oz.) can cream-style corn
  • dash of hot pepper sauce
  • 1/4 c. bacon dripping, melted
  • 1/4 c. minced green onions, with tops
  • 1/2 c. shredded Cheddar cheese

Directions

    Combine first five ingredients in a large mixing bowl.

    Set aside.

    In another bowl combine buttermilk and eggs.

    Add corn and remaining ingredients.

    Pour over dry ingredients and stir until blended.

    Do not overmix.

    Pour batter into a greased 8-inch square baking dish or pan.

    Bake at 400° for 35 minutes or until bread tests done.

    Cool 5 minutes before cutting into squares.
