  • 1 1/2 c. yellow corn meal
  • 2 Tbsp. baking powder
  • 2 tsp. salt
  • 1/2 c. cooking oil
  • 2 eggs, well beaten
  • 1 c. sour cream
  • 3 Tbsp. each: hot pepper, bell pepper and onion, chopped fine
  • 1 (8 oz.) can cream-style corn
  • 1 1/2 c. grated cheese

Directions

    Mix all ingredients except cheese. Pour 1/2 of mixture into large heavy greased skillet. Spread cheese over this. Top with balance of mixture. Bake at 375° for 1 hour or until done.
