- 1 1/2 c. corn meal
- 2 Tbsp. flour
- 3 tsp. baking powder
- 1 tsp. salt
- 3 eggs
- 1/2 c. vegetable oil
- 1 large chopped bell pepper
- 1 large chopped onion
- 3 or 4 jalapeno peppers, chopped
- 2/3 can cream-style corn
- 1 c. buttermilk
- 1 c. grated Cheddar cheese
Directions

1Mix all ingredients, except cheese.

2Pour half of the mixture into a greased pan, then sprinkle 1/2 of the cheese on top.

3Pour in the rest of the batter and top with the rest of the cheese. Bake at 375° for 45 minutes or until done.
