  • 1 1/2 c. corn meal
  • 2 Tbsp. flour
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 3 eggs
  • 1/2 c. vegetable oil
  • 1 large chopped bell pepper
  • 1 large chopped onion
  • 3 or 4 jalapeno peppers, chopped
  • 2/3 can cream-style corn
  • 1 c. buttermilk
  • 1 c. grated Cheddar cheese

Directions

    Mix all ingredients, except cheese.

    Pour half of the mixture into a greased pan, then sprinkle 1/2 of the cheese on top.

    Pour in the rest of the batter and top with the rest of the cheese. Bake at 375° for 45 minutes or until done.
