  • 1 c. plain corn meal
  • 1 c. self-rising corn meal
  • 1 c. pancake mix
  • 2 eggs
  • 1 can creamed corn
  • 2 c. milk
  • 1 c. grated onion
  • 1 1/2 c. sharp Cheddar
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 3 tsp. sugar
  • 1/2 c. oil
  • 1 Tbsp. crushed red pepper

Directions

    Mix ingredients, saving eggs and milk to be stirred in last. Preheat oven to 400° if baking cornsticks or muffins or 375° if pan baking.

    Bake until lightly browned.

    (Best if baked in iron skillet.)
