  • 1 small can cream-style or whole kernel corn
  • 1 1/2 c. self-rising meal
  • 1 c. buttermilk
  • 1/2 c. oil
  • 3 eggs
  • 1/4 c. diced onion
  • 1/2 c. diced green sweet pepper
  • 1/2 tsp. jalapeno pepper
  • 1 c. grated Cheddar cheese

    Mix ingredients (except cheese).

    Pour half of mixture in greased pan.

    Spread cheese over that and cover with remaining mixture.

    Bake at 425° for about 45 minutes.
