  • 1 c. corn meal
  • 1 c. milk
  • 3/4 tsp. salt
  • 1 chopped onion
  • 1 can green chiles
  • 2 eggs, beaten
  • 1/2 tsp. baking powder
  • 1 can creamed corn
  • 1 lb. Cheddar cheese
  • 1 1/2 lb. ground beef

Directions

    Brown meat with onion; drain. Mix together the corn meal, eggs, milk, baking powder, salt, corn and chile. Pour 1/2 of batter in greased casserole dish, all of the meat and grated cheese. Put remainder of batter on top of cheese. Bake at 350° for approximately 45 minutes. Recipe can be doubled.
