Mexican Cornbread

Ingredients

  • 1 lb. hamburger
  • 1 c. shredded cheese
  • 1/4 c. water
  • 2 eggs
  • 2 pkg. cornbread mix (I use Jiffy)
  • 1 c. creamed corn
  • 1 small can chopped green chilies
  • 1 c. milk
  • 2 Tbsp. taco seasoning
  • 1 whole onion, chopped

Directions

    Brown hamburger; drain excess grease.

    Add chilies, onion, water and taco seasoning and simmer about 15 minutes.

    Mix cornbread, corn, eggs and milk.

    Pour 1/2 mixture into a 13 x 9-inch cake pan.

    Top with hamburger mix and cheese.

    Add rest of cornbread mix.

    Bake at 350° for 1 hour.
