  • 1 c. self-rising flour
  • 1 c. cream-style corn
  • 1 c. whole milk
  • 1/4 c. oil
  • 1 c. sharp cheese, grated
  • 2 eggs, well beaten
  • 1 small onion, chopped
  • 1/4 c. jalapeno peppers, chopped

Directions

    Mix all ingredients except 1/2 of the cheese.

    Sprinkle this 1/2 on top of the batter.

    Bake at 400° until done (about 20 to 25 minutes) in a well-greased 8-inch pan or a 12 large muffin pan.
