- 1 c. yellow cornmeal
- 1 c. sifted flour
- 1/4 c. sugar
- 4 tsp. baking powder
- 1/2 tsp. salt
- 2 eggs
- 1 c. milk
- 1/4 c. shortening or bacon grease and oil
- 1 can cream-style corn
- 1 lb. ground meat, browned
- salt and pepper to taste
- 1 small onion, chopped and browned
- 4 chopped jalapeno peppers
Directions

1Sift dry ingredients together.

2Add eggs, milk and shortening. Beat with a fork; do not overbeat.

3Add canned corn.

4Pour half into greased cast-iron heavy frypan.

5Add seasoned meat, onion and peppers.

6Add rest of cornmeal batter.

7Bake at 350° for 40 to 50 minutes.
