  • 3 c. (2 boxes) Jiffy cornmeal mix
  • 3 eggs
  • 2/3 c. milk
  • 1/2 c. oil
  • 1 can cream-style corn
  • 2 to 3 c. shredded Cheddar cheese
  • 4 jalapeno peppers, chopped fine

Directions

    Mix all the ingredients together, reserving about 1 cup of shredded cheese to scatter on top.

    Bake in a 13 x 9-inch pan at 350° until done, about 30 to 40 minutes.
