Ingredients
- 1 c. yellow cornmeal
- 1 c. milk
- 2 eggs
- 3/4 tsp. salt
- 1/2 tsp. soda
- 1/2 c. bacon drippings
- 1 (1 lb. 1 oz.) can cream-style corn
- 1 lb. ground beef
- 1 large onion
- 1 lb. yellow cheese
- 5 canned jalapenos
Directions

1Combine cornmeal, milk, beaten eggs, salt, soda, bacon drippings and corn.

2Mix well and set aside.

3Brown ground beef and drain well.

4Pour half of batter into well-greased cast-iron skillet that has been dusted with cornmeal.

5Sprinkle cheese evenly over batter.

6Sprinkle meat over cheese.

7Sprinkle chopped onion and jalapenos evenly over meat.

8Top with remaining batter and bake at 350° for about 50 minutes.

9Serve hot.
