- 1 c. cornmeal
- 1 c. milk
- 1/2 c. bacon drippings
- 1/2 lb. Longhorn cheese, grated
- 4 jalapeno peppers, grated
- 2 eggs
- 1 c. creamed corn
- 1 large onion, chopped
- 1 lb. ground beef, browned and drained
Directions

1Sprinkle a small amount of cornmeal in bottom of pan and brown.

2Mix cornmeal, eggs, milk, corn and drippings together; pour half in pan.

3Sprinkle cheese over this.

4Add meat, onion and peppers.

5Pour on rest of batter.

6Bake at 350° for 45 to 50 minutes.
