  • 2 c. cornmeal
  • 1 c. flour
  • 3 eggs
  • 1/2 tsp. soda
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 c. buttermilk (more or less)
  • 1 can creamed corn
  • 1 c. grated sharp cheese
  • 1 jalapeno or 1 can chopped peppers
  • 1/2 c. oil
  • 2 Tbsp. onion
  • 1 clove garlic
  • 1 tsp. sugar or 1 pkg. Sweet 'N Low

Directions

    Mix cornmeal, flour, eggs, soda, baking powder, salt, creamed corn and oil.

    Mix well; add cheese, pepper, onion, garlic and sugar.

    Add buttermilk until right consistency.

    Pour into hot pan. Bake at 350° for 45 minutes to 1 hour.

    For best results bake in iron skillet.
