  • 3 c. cornmeal
  • 3 tsp. baking powder
  • 3 Tbsp. sugar
  • 3 eggs
  • 1 (16 oz.) can cream-style corn
  • 1 large onion, chopped
  • 1 c. chili peppers, chopped
  • 2 c. milk
  • 1/3 c. melted fat or oil
  • 1 1/2 c. shredded cheese

Directions

    Mix all dry ingredients; then add eggs and corn.

    Next, add vegetables, milk and oil.

    Pour 1/2 of the batter into a greased pan.

    Top with 1/2 of the cheese.

    Pour remaining batter into pan and top with rest of cheese.

    Bake in a 350° oven for about 45 minutes or until golden brown.
