- 3 c. cornmeal
- 3 tsp. baking powder
- 3 Tbsp. sugar
- 3 eggs
- 1 (16 oz.) can cream-style corn
- 1 large onion, chopped
- 1 c. chili peppers, chopped
- 2 c. milk
- 1/3 c. melted fat or oil
- 1 1/2 c. shredded cheese
Directions

1Mix all dry ingredients; then add eggs and corn.

2Next, add vegetables, milk and oil.

3Pour 1/2 of the batter into a greased pan.

4Top with 1/2 of the cheese.

5Pour remaining batter into pan and top with rest of cheese.

6Bake in a 350° oven for about 45 minutes or until golden brown.
