  • 1 1/4 c. self-rising meal
  • 1 c. whole kernel corn
  • 1/4 c. self-rising flour
  • 1 c. sour cream
  • 2 jalapeno peppers, chopped
  • 2 eggs
  • 1 c. Cheddar cheese, grated
  • 2/3 c. cooking oil

Directions

    Blend meal and flour together.

    Add corn and 1/2 cup cheese, sour cream, eggs and oil.

    Mix well.

    Stir in peppers.

    Pour in greased pan.

    Sprinkle remaining 1/2 cup cheese on top.

    Bake in preheated oven at 350° for about 35 minutes.
