- 1 c. yellow meal
- 2 eggs
- 1 small can cream corn
- 1 c. buttermilk
- 1/2 lb. Cheddar cheese, grated
- 3/4 tsp. soda
- 1 medium onion, chopped or 3 or 4 green onions
- 3 Tbsp. margarine
- 1 1/2 jalapeno peppers, remove seeds and chop
Directions

1Mix all ingredients except cheese and buttermilk.

2Heat butter in an iron skillet or square cake pan.

3Pour half of the mixture in the pan; sprinkle with the cheese.

4Cover with remaining mixture; top with cheese.

5Bake 30 to 35 minutes at 400°.

6Serves 6 to 8.
