- 1 1/2 c. yellow cornmeal
- 1 tsp. salt
- 1 Tbsp. baking powder
- 2 eggs, beaten
- 2 Tbsp. chopped green pepper
- 1 c. sour cream
- 1 c. cream-style corn
- 1/4 c. vegetable oil
- 1 to 2 jalapeno peppers, seeded and chopped
- 1 c. shredded Cheddar cheese
Directions

1Grease and heat a large cast-iron skillet.

2Combine corn meal, salt and baking powder.

3Mix well.

4Stir in remaining ingredients. Pour into hot greased skillet.

5Bake at 350° for 40 minutes. Yield: 10 servings.
