- 1 1/2 c. self-rising yellow or white cornmeal
- 1 c. cream-style corn
- 1 c. chopped onion
- 1 c. chopped red or green bell peppers
- 1 or 2 pods jalapeno pepper, chopped and seeded
- 2 eggs
- 1 c. milk
- 1/2 c. vegetable oil
- 1 c. grated Cheddar cheese
Directions

1Mix all ingredients, except cheese.

2Use a number 8 or number 10 iron skillet; heat in oven.

3Cover bottom of skillet with half the cornbread mixture.

4Sprinkle the grated cheese on top and cover with remainder of cornbread mixture.

5Bake at 375° for 35 to 40 minutes or until golden brown.
