Mexican Cornbread

  • 1 1/2 c. self-rising yellow or white cornmeal
  • 1 c. cream-style corn
  • 1 c. chopped onion
  • 1 c. chopped red or green bell peppers
  • 1 or 2 pods jalapeno pepper, chopped and seeded
  • 2 eggs
  • 1 c. milk
  • 1/2 c. vegetable oil
  • 1 c. grated Cheddar cheese

Directions

    Mix all ingredients, except cheese.

    Use a number 8 or number 10 iron skillet; heat in oven.

    Cover bottom of skillet with half the cornbread mixture.

    Sprinkle the grated cheese on top and cover with remainder of cornbread mixture.

    Bake at 375° for 35 to 40 minutes or until golden brown.
