- 1 1/2 c. self-rising corn meal
- 1 tsp. baking powder
- 2 eggs or equivalent
- 1/2 c. oil
- 1 c. sour cream
- 1 small can creamed corn
- 1 can jalapeno pepper, finely chopped
- 1 onion, chopped
- 4 oz. grated Cheddar cheese
Directions

1Mix all ingredients except cheese.

2Pour 1/2 batter into well oiled hot iron skillet or 9 x 9-inch pan.

3Sprinkle on cheese. Add remaining batter and spread evenly.

4Bake at 350° for 45 minutes.
