  • 1 c. cornmeal
  • 1 tsp. baking powder
  • 1/2 tsp. soda
  • 1/2 tsp. salt
  • 1 c. milk
  • 3 eggs, beaten
  • 1 can cream-style corn
  • 3 chopped jalapeno peppers
  • 1/2 lb. grated Cheddar cheese

Directions

    Combine all ingredients except cheese.

    Pour half of the batter in a hot greased skillet. Add cheese, then remaining batter. Cook at 375° until done.
