  • 1 1/2 c. corn meal
  • 1/2 c. flour
  • 3 eggs
  • 1 jalapeno pepper, chopped fine
  • 1 large grated onion
  • 1/2 jar pimento pieces
  • 1 large green pepper, diced fine
  • 1/2 c. oil
  • 2 1/2 c. grated cheese
  • 1 small can Mexicorn

Directions

    Mix corn meal and flour.

    Whisk eggs.

    Add all other ingredients to cornmeal mixture and mix until wet.

    Pour into a greased cast-iron skillet; bake at 375° for 30 to 35 minutes or until golden brown on top.
