- 1/2 c. flour
- 3 eggs
- 1 jalapeno pepper, chopped fine
- 1 large grated onion
- 1/2 jar pimento pieces
- 1 large green pepper, diced fine
- 1/2 c. oil
- 2 1/2 c. grated cheese
- 1 small can Mexicorn
Directions

1Mix corn meal and flour.

2Whisk eggs.

3Add all other ingredients to cornmeal mixture and mix until wet.

4Pour into a greased cast-iron skillet; bake at 375° for 30 to 35 minutes or until golden brown on top.
