  • 1 c. self-rising cornmeal
  • 1/4 c. self-rising flour
  • 1/2 tsp. soda
  • 2 Tbsp. sugar
  • 1/2 c. buttermilk
  • 1 egg
  • 1 c. whole kernel corn
  • 2 jalapeno peppers, chopped
  • 2 Tbsp. cooking oil
  • sharp Cheddar cheese slices

Directions

    Mix all ingredients, except cheese slices.

    Put 1/2 of batter in greased pan.

    Arrange slices on top of this.

    Cover with remaining batter, making sure all the cheese is well covered. Cook at 450° until done.
