- 1/4 c. self-rising flour
- 1/2 tsp. soda
- 2 Tbsp. sugar
- 1/2 c. buttermilk
- 1 egg
- 1 c. whole kernel corn
- 2 jalapeno peppers, chopped
- 2 Tbsp. cooking oil
- sharp Cheddar cheese slices
Directions

1Mix all ingredients, except cheese slices.

2Put 1/2 of batter in greased pan.

3Arrange slices on top of this.

4Cover with remaining batter, making sure all the cheese is well covered. Cook at 450° until done.
