Mexican Cornbread Casserole

Ingredients

  • 1 lb. ground beef
  • 1/3 c. chopped onion
  • 1 (8 oz.) jar Cheez Whiz (mild Mexican flavor)
  • 1 (8 1/2 oz.) pkg. Mexican cornbread mix
  • 1 (8 3/4 oz.) can whole kernel corn, drained
  • 1 Tbsp. margarine, melted
  • 1 Tbsp. oil
  • 1/2 c. grated cheese
  • 2 tsp. sugar
  • 1/8 tsp. black pepper
  • 3 Tbsp. chopped green pepper
  • 3 Tbsp. chopped red pepper

    Brown meat; drain.

    Add onion and cook until tender.

    Stir in Cheez Whiz until melted.

    Spoon into oblong casserole dish. Prepare cornbread mix as directed.

    Add remaining ingredients, mixing just until moistened.

    Spoon over meat and cheese mixture. Bake at 375° for 16 to 18 minutes.
