- 6 hard-cooked Eggs
- 1/4 c. Mayonnaise
- 2 Tbsp. pickled Jalapeno slices, minced
- 1 Tbsp. prepared Mustard
- 1/4 tsp. ground Cumin
- 1/8 tsp. Salt
- Garnishes: chile powder and fresh parsley sprigs
Directions

1Cut eggs in half lengthwise and carefully remove yolks.

2Mash egg yolks in a small bowl.

3Stir in mayo and next 4 ingredients, and blend well.

4Spoon or pipe yolk mixture evenly into egg white halves.

5Garnish, if desired.

6Although these eggs are not too spicy, prepare a milder version by reducing the amount of minced jalapenos.
