- 1 lb. Cheddar cheese
- 2 lb. hamburger
- 1 large onion, chopped
- 1 jalapeno pepper, chopped (optional)
- 1 can cream of chicken soup
- 1 can enchilada sauce
- soft corn tortillas, cut in quarters
Directions

1Grate cheese and set aside.

2Combine hamburger, onion and pepper in skillet; brown and drain.

3Add soup and enchilada sauce. Line casserole dish with tortillas.

4Layer meat mixture, cheese and tortillas, ending, with cheese on top.

5Bake at 350° for 20 minutes or until cheese melts.
