Ingredients

  • 1 1/2 lb. ground beef or turkey
  • 1 medium onion, chopped
  • 1 (1 lb.) can tomatoes
  • 1 (10 oz.) can enchilada sauce
  • 1 (2 1/4 oz.) can sliced ripe olives
  • 1 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/4 tsp. pepper
  • 1/4 c. salad oil
  • 8 corn tortillas
  • 2 c. small curd cottage cheese
  • 1 egg
  • 1/2 lb. Monterey Jack cheese, thinly sliced
  • 1/2 c. shredded Cheddar cheese
  • 1/2 c. crushed tortilla chips

Directions

    Brown meat and onion in large frying pan.

    Blend in tomatoes, enchilada sauce, olives with liquid from can, salt, garlic and pepper.

    Bring to a boil; reduce heat and simmer, uncovered, for 20 minutes (at least, otherwise sauce will be too thin).

    Stir occasionally.
