- 1 1/2 lb. ground beef or turkey
- 1 medium onion, chopped
- 1 (1 lb.) can tomatoes
- 1 (10 oz.) can enchilada sauce
- 1 (2 1/4 oz.) can sliced ripe olives
- 1 tsp. salt
- 1/4 tsp. garlic powder
- 1/4 tsp. pepper
- 1/4 c. salad oil
- 8 corn tortillas
- 2 c. small curd cottage cheese
- 1 egg
- 1/2 lb. Monterey Jack cheese, thinly sliced
- 1/2 c. shredded Cheddar cheese
- 1/2 c. crushed tortilla chips
Directions

1Brown meat and onion in large frying pan.

2Blend in tomatoes, enchilada sauce, olives with liquid from can, salt, garlic and pepper.

3Bring to a boil; reduce heat and simmer, uncovered, for 20 minutes (at least, otherwise sauce will be too thin).

4Stir occasionally.
