- 1 1/2 lb. hamburger
- 1 1/2 tsp. cumin
- 1 Tbsp. chili powder
- 1/4 tsp. garlic powder
- 1/4 tsp. red pepper
- 1 tsp. salt
- 1 tsp. pepper
- 1 (16 oz.) can tomatoes
- 10 to 12 corn tortillas
- 2 c. cottage cheese
- 1 c. grated Monterey Jack cheese with peppers
- 1 egg
- 2 c. shredded lettuce
- 1/2 c. chopped tomato
- 1/2 c. grated Cheddar cheese
- 3 green onions
- 1/4 c. black olives
Directions

1Brown hamburger and add seasoning and tomatoes.

2Spray a 9 x 13-inch pan with Pam and cover bottom and sides with tortillas. Pour beef mixture over tortillas; place layer of tortillas over meat mixture.

3Combine the two cheeses and egg.

4Pour over tortillas and bake at 350° for 30 minutes.

5Sprinkle rows of last 5 ingredients diagonally before serving.
