  • 1 lb. ground beef
  • 1/2 c. chopped onion
  • 1/2 c. chopped bell pepper
  • 1/2 pkg. taco seasoning mix
  • 1 can (8 oz.) tomato sauce
  • 1 can (6 oz.) tomato paste
  • 1/2 c. sliced ripe olives
  • 1/4 c. water
  • 4 flour tortillas
  • 1 c. grated Cheddar cheese
  • 1 c. Mozzarella, grated
  • 2 c. broken corn chips
  • 1 c. sour cream

    Brown ground beef in skillet.

    Add onion and bell pepper; drain.

    Mix in taco seasoning mix, tomato paste, tomato sauce, olives and water.

    Simmer until thick and bubbly.

    Place 2 tortillas on bottom of a 12 x 7-inch baking dish.

    Top with half of meat mixture, then half of each cheese.

    Repeat with tortillas, then beef mixture and so on.

    Place layer of corn chips and cheese on top and bake for 20 to 30 minutes at 350°.
