  • 24 yellow corn tortillas
  • 2 1lb. ground turkey
  • 2 pkgs of taco seasoning
  • 1 24oz can of red enchilada sauce
  • 1 24oz can of refried beans
  • 1 pkg 16oz of shredded mexican cheese
  • 1 Tblsp oil
  • 1 16oz can of chopped black olives
  • 1 24oz can jalapeno cheese
  • Sour Cream

    In a frying pan cook turkey,add taco seasoning until thoroughly mixed. Heat in a pan the oil and enchilada sauce. In a separate pan heat up refried beans and jalapeno cheese. When the enchilada sauce is hot, dip one by one the corn tortillas and continue with 4 layers of:

    6 tortillas, layer refried bean mixture, layer of meat, layer of shredded mexican cheese, continue until all 4 layers are done. Top off with a layer of shredded cheese and finally sprinkle the black chopped olives on top. Cover with aluminum foil and cook in a preheated oven at 350 degrees for 25 minutes. Compliment with a tablespoon of sour cream.
