Mexican Lasagna

Ingredients

  • 1 lb. ground beef, cooked
  • 1 (16 oz.) can refried beans
  • 1 tsp. cumin
  • 3/4 tsp. garlic powder
  • 12 to 15 uncooked lasagna noodles
  • 1 1/2 c. water
  • 2 1/2 c. salsa
  • 2 c. sour cream
  • 3/4 c. green onion
  • 1 can sliced black olives
  • 1 c. shredded Monterey Jack cheese

Directions

    Combine first 4 ingredients.

    Place 4 or 5 noodles in bottom of a 13 x 9-inch pan. Spread 1/2 beef and bean mixture on top of noodles. Top with 4 or 5 noodles. Spread rest of beef and bean mixture on top.

    Top with rest of noodles. Combine water and salsa. Pour on top of everything.

    Cover tightly with foil. Bake at 350° for 1 1/2 hours. Combine sour cream, onion and olives. Spoon over casserole. Top with cheese. Bake 5 minutes longer, uncovered, or until cheese is melted.
