  • 1 lb. ground beef
  • 1/2 c. each green pepper and chopped onion
  • 1 (24 oz.) jar salsa
  • 1 (8 oz.) can corn, drained
  • 1 tsp. each chili powder and cumin
  • 10 corn tortillas (6-inch)
  • 16 oz. cottage cheese (small curd)
  • 4 oz. sharp Cheddar cheese

Directions

    Brown meat, onion and pepper; drain. Add salsa, corn and seasonings. Layer 1/2 meat sauce, 1/2 of the tortillas and 1/2 of the cottage cheese in a 13 x 9 baking dish. Repeat layers, ending with meat sauce. Sprinkle with cheese. Bake at 375° for 30 minutes.
