- 1 lb. ground beef
- 1 (16 oz.) can whole tomatoes, cut up
- 1 pkg. taco seasoning
- 1 can French fried onions
- 1 (16 oz.) carton cottage cheese
- 2 c. shredded Cheddar cheese
- 2 eggs, slightly beaten
- 12 (6-inch) flour or corn tortillas
- 2 tomatoes, chopped
- shredded lettuce
Directions

1Brown beef in skillet.

2Drain.

3Add canned tomatoes and taco seasoning; simmer 5 minutes.

4Stir in 1/2 can fried onions.

5In bowl, mix cottage cheese, 1 cup Cheddar cheese and eggs.

6Place 3 tortillas on the bottom of a greased 8 x 12-inch baking dish. Overlap 6 tortillas on sides of dish.

7Spoon mixture evenly in dish.

8Top with 3 teaspoons chips, then cheese mixture.

9Bake, covered at 350° for 45 minutes.

10Sprinkle with remaining cheese. Put onions on top and bake 5 minutes.

11When serving, arrange tomatoes and lettuce around the edges.

12Makes 6 servings.
