- 2 c. beef broth
- 1 c. long grain rice
- 1 Tbsp. butter
- 1 tsp. salt
- 2 eggs
- 2 Tbsp. chopped pimiento
Directions

1Grease a 10-inch pie plate.

2In medium saucepan, heat broth to boiling.

3Stir in rice, butter and salt.

4Return to boil.

5Cover, reduce heat and simmer according to package instructions.

6Remove from heat; let cool slightly.

7Stir in eggs and pimiento.

8Press against sides and bottom of pie plate.
