Ingredients

  • 1 medium onion, chopped
  • 1 Tbsp. olive oil
  • 1/2 c. vegetable broth
  • 1 tsp. chili powder
  • 1/2 tsp. sea salt
  • 1/2 c. water
  • 2 cloves garlic, chopped
  • 1 (8 1/4 oz.) can stewed tomatoes
  • 2 Tbsp. picante sauce
  • 1/2 tsp. ground cumin
  • 1 c. rice

Directions

    In saucepan, saut garlic and onion with the olive oil until they are tender.

    Add stewed tomatoes, broth, picante sauce, chili powder, cumin and sea salt.

    Bring to a boil.

    Stir in rice and water.

    Cover and reduce heat to a simmer.

    Simmer about 20 minutes or until the liquid is absorbed.
