- 1 medium onion, chopped
- 1 Tbsp. olive oil
- 1/2 c. vegetable broth
- 1 tsp. chili powder
- 1/2 tsp. sea salt
- 1/2 c. water
- 2 cloves garlic, chopped
- 1 (8 1/4 oz.) can stewed tomatoes
- 2 Tbsp. picante sauce
- 1/2 tsp. ground cumin
- 1 c. rice
Directions

1In saucepan, saut garlic and onion with the olive oil until they are tender.

2Add stewed tomatoes, broth, picante sauce, chili powder, cumin and sea salt.

3Bring to a boil.

4Stir in rice and water.

5Cover and reduce heat to a simmer.

6Simmer about 20 minutes or until the liquid is absorbed.
