Ingredients
- 1 c. long grain rice
- 1/4 onion, cut in rings
- 2 Tbsp. oil
- 1 clove garlic, minced
- 1 3/4 c. hot chicken broth
- 2 tomatoes, peeled, finely chopped and partially seeded (1/2 lb.)
- 1/2 tsp. salt
- 1/4 tsp. cumin
- 1/2 green pepper, cut in rings
Directions

1In a medium saucepan, saute sliced onion in oil until tender. Remove and set aside.

2Saute chopped onion and garlic in remaining oil until tender.

3Add rice.

4Cook and stir until golden.

5Stir in chicken broth, tomatoes, salt and cumin.

6Arrange sliced onion and green pepper on top.

7Cover.

8Simmer over low heat for about 25 minutes, until rice is tender and liquid is absorbed.
