- 3 Tbsp. margarine
- 1 1/4 c. uncooked rice
- 1/2 c. chopped onion
- 1/4 c. diced green pepper
- 1 clove garlic, crushed
- 2 1/2 c. hot water
- 1 (16 oz.) can tomatoes
- 2 tsp. salt
- 2 tsp. chili powder
Directions

1Melt margarine in large pan.

2Add rice, onion, pepper and garlic.

3Cook until rice is brown.

4Add hot water, tomatoes, salt and chili powder.

5Bring to a boil.

6Cover and cook over low heat until liquid is absorbed and the rice is tender, about 35 minutes. Makes 7 servings.
