- 5 Tbsp. oil
- 1 onion, chopped
- 2 cloves garlic, chopped
- 2 c. rice (uncooked)
- 2 c. canned tomatoes with juice
- 2 c. chicken stock
- salt and pepper to taste
Directions

1In a large skillet, heat oil over medium heat.

2Saute onion, garlic and rice in oil, stirring constantly, until rice is golden brown.

3Break up tomatoes into small pieces.

4`Add tomatoes and juice and chicken stock to the rice.

5Stir only enough to mix. Cover and simmer 20 to 30 minutes, until rice is tender and liquid is absorbed.

6Do not uncover or stir during cooking time.
