Mexican Rice

Ingredients

  • 2 1/2 tsp. olive oil
  • 1 1/4 c. onion, chopped
  • 3 cloves garlic, minced
  • 2 1/2 carrots, peeled and chopped
  • 1 1/4 c. canned crushed tomatoes
  • 3 3/4 c. chicken stock
  • 1 1/4 tsp. salt or to taste (optional)
  • 2 1/2 c. long grain rice
  • 3/4 tsp. ground cumin

Directions

    Heat oil in heavy saucepan over medium heat.

    Stir in rice and cook about 1 minute.

    Stir in onion and garlic and saute about 3 minutes, stirring frequently, until onion is translucent.

    Stir in remaining ingredients.

    Increase heat to high and bring to a boil. Reduce heat to low.

    Cover and simmer 20 minutes or until liquid is absorbed and rice is tender.

    Let stand 5 minutes.

    Fluff rice and serve.
