Ingredients
- 2 1/2 tsp. olive oil
- 1 1/4 c. onion, chopped
- 3 cloves garlic, minced
- 2 1/2 carrots, peeled and chopped
- 1 1/4 c. canned crushed tomatoes
- 3 3/4 c. chicken stock
- 1 1/4 tsp. salt or to taste (optional)
- 2 1/2 c. long grain rice
- 3/4 tsp. ground cumin
Directions

1Heat oil in heavy saucepan over medium heat.

2Stir in rice and cook about 1 minute.

3Stir in onion and garlic and saute about 3 minutes, stirring frequently, until onion is translucent.

4Stir in remaining ingredients.

5Increase heat to high and bring to a boil. Reduce heat to low.

6Cover and simmer 20 minutes or until liquid is absorbed and rice is tender.

7Let stand 5 minutes.

8Fluff rice and serve.
