- 2 Tbsp. butter
- 1/2 c. chopped onions
- 2 cloves garlic, minced
- 1 tomato, peeled, seeded and chopped
- 2 c. chicken broth
- 1 tsp. cumin
- salt
- 1 c. uncooked rice
- 1/2 c. chopped green pepper
Directions

1Melt butter in 2 to 3-quart saucepan.

2Add rice and cook over moderate heat until golden, stirring often.

3Add onion, pepper and garlic, cook 30 seconds.

4Add broth and cumin.

5Bring to a boil; stir once or twice.

6Reduce heat, cover and simmer 15 minutes or until rice is tender and all liquid is absorbed.

7Salt to taste.
