Mexican Salsa Rice

  • 1 Tablespoon Olive Oil
  • 1/2 cups Chopped Onion
  • 2 cloves Garlic, Minced
  • 1/4 teaspoons Salt
  • 1 cup Long Grain Rice
  • 1-3/4 cup Chicken Broth
  • 3/4 cups Salsa
  • 1/4 cups Water
  • 1/2 Tablespoons Lime Juice
  • 2 Tablespoons Chopped Cilantro

Directions

    Over medium-high heat in a medium to large pan, warm the olive oil. Add onion, garlic and salt and cook for 2 minutes, stirring occasionally.

    Add rice and cook for 1 minute while stirring. Add broth, salsa, water, and lime juice and stir. Bring to a boil. Once boiling, cover and reduce heat to low and simmer for about 20 minutes. If rice is not tender after 20 minutes, cook for an additional 1-3 minutes.

    Remove pan from heat and uncover. Add cilantro and toss around. Let it stand for about 5 minutes, then serve.
