  • 8 eggs
  • 1 lb chorizo sausage
  • 10 ounces green chilies
  • salt and pepper
  • 1 cup cheddar cheese
  • salsa
  • sour cream
  • guacamole (optional)

Directions

    Cook chorizo in large skillet.

    When it is cooked pour eggs and season to taste.

    Make like a large omellet.

    Once side one is done flip in sections and place green chillis and cheese on.

    Cover it to let the cheese melt.

    Serve with salsa, sour cream and gucamole to taste.

    Note: You can add bell peppers, mushrooms, olives, and onions to taste.
