  • 1 or 2 lb. ground meat
  • 2 or 3 Tbsp. oil
  • 1 can Ro-Tel tomatoes
  • 2 or 3 c. hot water
  • bell pepper and onion to taste
  • 4 or 5 Tbsp. chili powder
  • 1/2 c. rice
  • 2 or 3 large potatoes, diced

Directions

    Brown meat in oil. Add water, tomatoes, onions and bell pepper. Cook 10 minutes. Add rice, potatoes and chili powder. Simmer about 1 hour.
