Mexican Stuffed Shells

  • 1 box pasta shells (for stuffing)
  • 1 1/2 lb. ground beef
  • 16 oz. picante sauce or salsa (mild)
  • 1/2 c. water
  • 8 oz. tomato sauce
  • 4 oz. chopped chilies (optional)
  • 8 oz. Monterey Jack cheese, grated
  • 1 small onion, chopped

Directions

    Cook and drain shells. Brown beef and drain.

    Combine picante sauce, water and tomato sauce.

    Stir 1/2 cup into ground beef along with chilies, 1/2 cup grated cheese and onion.

    Mix. Pour 1/2 of remaining sauce on bottom of 9 x 13-inch pan.

    Stuff shells with meat.

    Arrange shells in dish, pour remaining sauce over shells.

    Then top with remaining cheese. Bake in 350° oven for 30 to 40 minutes (cover for at least 30 minutes of baking time).
