- 6 hard-cooked eggs
- 1/4 c. mayonnaise or salad dressing
- 2 Tbsp. canned, diced green chili peppers
- 1 Tbsp. chopped, pitted ripe olives
- 1/2 tsp. chili powder
- 1/8 tsp. ground red pepper
Directions

1Halve hard-cooked eggs lengthwise and remove yolks.

2Place yolks in a bowl; mash with a fork.

3Add mayonnaise, green chili peppers, olives, chili powder and red pepper to yolk mixture.

4Mix well.

5Stuff egg whites with yolk mixture.

6Garnish with sliced pitted ripe olives or cilantro and serve with salsa, if desired.
