  • 1/4 cups Canola Oil
  • 1 cup Your Favorite Popcorn Kernels
  • 1 whole Lime, Zest Only
  • 4 Tablespoons Unsalted Butter, melted
  • 2 teaspoons Salt To Taste
  • 1/4 cups Cotija Cheese
  • 2 Tablespoons Fresh Cilantro, Chopped

    Start by heating a large pot on medium-high heat.

    Add oil and a few of the popcorn seeds.

    Cover, and shake a few times.

    Once kernels pop, add remaining popcorn kernels, cover, and continue to shake covered pot until all kernels have popped.

    Add lime zest to a large bowl.

    Uncover, and pour popcorn into bowl.

    Pour in melted butter and salt, and give it a good toss.

    Toss a few more times until all popcorn is nicely coated with butter and salt.

    Add cotija cheese and chopped cilantro.

    Toss a couple of more times, then taste and season accordingly.
