Microwave Bread Pudding

  • 5 slices bread, cubed or torn up
  • 1 large can evaporated milk
  • 2 eggs, beaten
  • 1 Tbsp. oleo
  • 2/3 c. sugar
  • dash of salt
  • 1 tsp. vanilla
  • 1/2 tsp. cinnamon
  • 1/2 c. raisins
  • 1 banana (optional)

Directions

    Heat milk and oleo in 1 1/2-quart casserole on High 3 minutes. Stir in eggs, sugar, cinnamon, salt, vanilla and fruit.

    Add torn bread to mixture.

    If rather thick, may add additional 1/4 cup regular milk to thin out mixture.

    Cook High 7 minutes covered. Serve warm.
