Microwave Caramel Corn

Ingredients

  • 4 qt. popped corn
  • 1/2 tsp. baking soda
  • 1 c. brown sugar
  • 1/4 c. white syrup
  • 1 stick butter
  • 1/2 tsp. salt (if popcorn is unsalted)

Directions

    Place popped corn in large brown grocery bag.

    Mix sugar, syrup, butter and salt (if needed).

    In 2-quart microwave dish, cook in microwave on High until it boils (about 2 minutes).

    Turn dish and cook another 2 minutes.

    Add baking soda and stir until mixture becomes light and foamy.

    Pour over popped corn in bag and shake well.

    Microwave on High 1 1/2 minutes.

    Remove and shake well.

    Cook another minute on High.

    Remove and shake. Spread on wax paper to cool.
