  • 1/4 lb unsalted butter (1 stick)
  • 1 lb mushrooms, cleaned
  • 5 shallots, diced
  • 1/2 cup parsley, packed
  • 2 tsp kosher salt
  • 1/2 tsp ground black pepper

Directions

    Rough chop the mushrooms and place in a food processor bowl.

    Process the mushrooms until they resemble a coarse meal.

    Heat the butter in a microwave safe souffle dish uncovered at 100% for 2 minutes or until melted.

    Add the mushrooms to the melted butter and stir to coat.

    Microwave at 100% for 5 minutes.

    Place the shallots and parsley in the food processor work bowl and process until they resemble a coarse meal as well.

    Remove the mushrooms from the micro.

    Stir in the shallots and parsley, kosher salt, and pepper.

    Micro at 100% for 8 minutes.

    Use immediately or allow to cool and freeze
