Microwave Honey Corn Bread

- 1 c. yellow cornmeal
- 1 c. biscuit baking mix
- 3 tsp. baking powder
- 1 c. milk
- 2 eggs, beaten
- 1/3 c. honey
- 2 Tbsp. vegetable oil
Directions

1Mix cornmeal, biscuit mix and baking powder in large bowl.

2Add milk, eggs, honey and oil.

3Stir just until dry ingredients are moistened.

4Pour into 8-inch square microproof baking dish.

5Cook on 50 for 10 minutes.

6Rotate dish if bread seems to be rising unevenly.

7Cook on High 2 to 4 minutes or until bread tests done. Remove and let stand 5 minutes; serve warm.

8Makes 8 servings. Cooking time is 12 to 14 minutes.
