- 2/3 c. sugar
- 1/4 tsp. salt
- 4 Tbsp. cornstarch
- 1/3 c. reconstituted lemon juice
- 2 1/2 c. water
- 2 eggs
- 4 drops yellow food coloring
- 1 Tbsp. oleo
Directions

1In bowl safe for microwave, put in sugar, salt and cornstarch mix.

2Add lemon juice and eggs.

3Beat well.

4Add 1/2 cup water. Beat again.

5Add the other 2 cups water and food coloring.

6Beat again, then put in microwave for 2 minutes.

7Take out and beat.
-
8Do this for around 8 minutes.

9Beat after every 2 minutes.

10It is important to beat it good and be sure to stir it good off the bottom.

11Beat in oleo.

12Pour into 9-inch baked pie shell.
